Buffalo Chicken Chili
Ground chicken 1-2 pounds depending on how big a pot you want to make
4 celery stalks
1 onion
1 green pepper
4 garlic cloves
3 tablespoons chili powder
2 tablespoons ground cumin
Black pepper to taste
I added red pepper flakes to make it even hotter to taste
2 cans fire roasted diced tomatoes I like rotel
1/2 to 1 cup buffalo sauce
1 can Pinto beans
1 can Kidney beans
1 can tomato sauce I used rotel
I also used one small can of paste to make it thick (optional)
Brown meat and veggies together than add everything except the beans. Don't add your beans to the last 15 minutes of the simmer. I simmered this for about 30-45 min before I added the beans, than another 20 min after that.
I made it just as you see here, I used almost 14 oz of Budweiser wing sauce. It turned out very good and I have not stopped talking about it, I love chili and I like to try different kinds. This is defiantly different from anything else I have tried. You get the wing flavor fighting it's way through the normal chili flavor. I have never bought ground chicken or eaten it, even when I went to the store I looked at breast meat, I was going to just chop it up into chunks, but in the end it was three times the price. Although I still believe that would be good, I am glad that I tried the ground chicken. In this recipe you can't tell it's chicken, not because it taste like beef, but because chicken was made for wing sauce. It taste like it should very good.
